Ingredients

  • 500 grams all-purpose flour
  • 7 grams active dry yeast
  • 100 grams sugar
  • 1 teaspoon salt
  • 250 milliliters almond milk
  • 50 milliliters vegetable oil
  • 1 teaspoon vanilla extract
  • 250 grams blueberries
  • 1 tablespoon cornstarch
  • 1 tablespoon lemon juice

Directions

Step 1

In a small bowl, mix the yeast with 100 milliliters of lukewarm almond milk and 1 tablespoon of sugar. Allow it to sit for about 10 minutes until frothy.

Step 2

In a large mixing bowl, combine the flour, remaining sugar, and salt. Make a well in the center and pour in the yeast mixture, remaining almond milk, vegetable oil, and vanilla extract.

Step 3

Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment.

Step 4

Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.

While the dough is rising, prepare the blueberry filling. Combine the blueberries, cornstarch, and lemon juice in a bowl and set aside.
