In a small bowl, mix the yeast with 100 milliliters of lukewarm almond milk and 1 tablespoon of sugar. Allow it to sit for about 10 minutes until frothy.
In a large mixing bowl, combine the flour, remaining sugar, and salt. Make a well in the center and pour in the yeast mixture, remaining almond milk, vegetable oil, and vanilla extract.
Knead the dough on a floured surface for about 10 minutes until smooth and elastic. Alternatively, use a stand mixer with a dough hook attachment.
Place the dough in a lightly oiled bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1 hour, or until doubled in size.
While the dough is rising, prepare the blueberry filling. Combine the blueberries, cornstarch, and lemon juice in a bowl and set aside.
Once the dough has risen, punch it down and divide it into 12 equal parts.
Roll each piece into a ball and then flatten it into a disc. Place about a tablespoon of the blueberry mixture in the center of each disc.
Carefully bring the edges of the dough up and around the filling, pinching to seal. Shape into a ball and place seam-side down on a baking sheet lined with parchment paper.
Cover the buns with a cloth and let them rise for another 30 minutes.
Preheat your oven to 180°C (350°F).
Bake the buns for 20-25 minutes, or until they are golden brown.
