Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 0.5 teaspoon salt
  • 3 quarters cup granulated sugar
  • 1 cup almonds, whole and unblanched
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 0.5 teaspoon almond extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.

Step 2

In a large bowl, whisk together the flour, baking powder, and salt.

Step 3

In another bowl, beat the sugar and eggs until thick and pale, about 2-3 minutes.

Step 4

Stir in the vanilla and almond extracts.

Step 5

Add the dry ingredients to the wet ingredients little by little, mixing until a dough forms.

Step 6

Fold in the almonds with a spatula until evenly distributed throughout the dough.

Step 7

Transfer the dough to the prepared baking sheet. With damp hands, form the dough into a log about 12 inches long and 3 inches wide.

Step 8

Bake the log for 25-30 minutes or until lightly golden, then remove from the oven and allow it to cool on the baking sheet for about 10 minutes.

Step 9

Using a serrated knife, carefully cut the log into 1/2-inch thick slices.

Step 10

Arrange the slices cut side down on the baking sheet and return to the oven.

Step 11

Bake them for an additional 10 minutes, flip them over, and bake for another 10 minutes, or until the biscotti are crisp and golden on both sides.

Step 12

Transfer the biscotti to a wire rack to cool completely before serving or storing.
