In a medium saucepan, pour 2 cups of water and bring to a simmer over medium heat.
Add the loose leaf black tea, cinnamon stick, whole cloves, cardamom pods, star anise, and freshly sliced ginger to the simmering water.
Cover the saucepan and let the tea steep for about 10 minutes, allowing the spices to infuse their flavors into the water.
After 10 minutes, remove the saucepan from heat and stir in the vanilla extract and maple syrup.
Strain the tea mixture through a fine mesh sieve into a pitcher to remove the tea leaves and spices.
Allow the chai tea to cool to room temperature. This can be sped up by placing the pitcher in the refrigerator.
Once cooled, fill two glasses with ice cubes.
Pour 1/2 cup of the strained chai tea into each glass over the ice cubes.
Top up each glass with 1/2 cup of unsweetened almond milk.
Stir gently to mix the chai with the almond milk, then serve immediately.
