Ingredients

  • 4 pieces large eggs
  • 2 tablespoons unsweetened almond milk
  • 1 tablespoon olive oil
  • 0.5 cup cherry tomatoes
  • 1 cup baby spinach
  • 2 stalks green onions
  • 0.25 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons fresh cilantro

Directions

Step 1

Crack the eggs into a mixing bowl and add the unsweetened almond milk, salt, and black pepper. Whisk vigorously until well combined and slightly frothy.

Step 2

Slice the cherry tomatoes in halves and set them aside. Chop the green onions and cilantro finely.

Step 3

Heat olive oil in a non-stick skillet over medium heat. Once hot, add the chopped green onions and sauté for about 1 minute until they begin to soften.

Step 4

Add the cherry tomatoes to the skillet and cook for an additional 2 minutes until they start to release some juice. Add the baby spinach and sauté until wilted, about 1-2 minutes.

Step 5

Pour the egg mixture into the skillet and immediately reduce the heat to low. Allow the eggs to cook undisturbed for about 1 minute.

Step 6

Using a spatula, gently stir the eggs, scraping the bottom of the skillet to form curds. Continue to stir occasionally, cooking the eggs slowly until they are just set but still creamy and slightly runny.

Step 7

Remove from heat and sprinkle the cilantro over the top for a fresh finish. Serve immediately while hot.
