Ingredients

  • 800 ml Full-fat coconut milk
  • 4 tbsp Maple syrup
  • 1 tsp Vanilla extract
  • 2 tsp Agar agar powder
  • 4 capsules Probiotic capsules

Directions

Step 1

In a medium saucepan, pour the full-fat coconut milk and bring it to a gentle boil over medium heat.

Step 2

As the milk reaches a boil, add the agar agar powder and whisk it in thoroughly. Let it simmer for 1-2 minutes while constantly whisking.

Step 3

Remove the saucepan from the heat and let the mixture cool to around 110°F (43°C) – warm to the touch but not hot.

Step 4

Once cooled, open the probiotic capsules and gently stir the contents into the coconut milk mixture. Make sure not to stir vigorously or it may damage the probiotics.

Step 5

Stir in the maple syrup and vanilla extract until well combined.

Step 6

Transfer the mixture into a clean glass jar or a bowl, then cover it with a clean cloth secured with a rubber band or string.

Step 7

Let the mixture sit in a warm environment, such as inside a turned-off oven with the light on, for 12-24 hours. The longer it sits, the tangier the yogurt will become.

Step 8

Once the yogurt has reached your desired taste, cover it with a tight-fitting lid and refrigerate it for at least 4 hours to thicken.

Step 9

Stir the yogurt gently before serving. Enjoy it plain or with your choice of dairy-free granola or fruits.
