Ingredients

  • 3 large russet potatoes
  • 4 tablespoons olive oil
  • 2 teaspoons onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon dried dill
  • 3 tablespoons nutritional yeast
  • 1 tablespoon lemon juice
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper

Directions

Step 1

Preheat your oven to 400°F (200°C) and line two large baking sheets with parchment paper.

Step 2

Wash the russet potatoes thoroughly and slice them into very thin rounds, about 1/8 inch thick. A mandoline slicer is recommended for consistent thickness.

Step 3

In a large bowl, toss the potato slices with olive oil until they are evenly coated.

Step 4

Arrange the potato slices in a single layer on the prepared baking sheets, making sure they do not overlap.

Step 5

Bake in the preheated oven for 12-15 minutes, then flip the slices carefully and bake for another 10-15 minutes, or until they turn golden brown and crispy. Keep an eye on them as they can burn quickly.

Step 6

While the chips are baking, prepare the seasoning by combining onion powder, garlic powder, dried dill, nutritional yeast, lemon juice, salt, and black pepper in a small bowl.

Step 7

Once the chips are done baking, remove them from the oven and let them cool for a few minutes.

Step 8

Place the chips in a large bowl, sprinkle with the prepared seasoning, and toss gently to ensure even coating.

Step 9

Serve immediately or store in an airtight container when completely cooled to retain their crispiness.
