In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt.
In a separate small bowl or measuring cup, mix together the warm water and unsweetened almond milk. Ensure the mixture is around 110°F (43°C).
Make a well in the center of the dry ingredients and pour in the warm water-almond milk mixture along with the olive oil.
Stir the mixture until it forms a shaggy dough. Transfer it to a lightly floured surface.
Knead the dough for about 8-10 minutes until it becomes smooth and elastic. If the dough is sticky, add a little more flour as needed.
Grease a large bowl with a little olive oil. Place the kneaded dough into the bowl, turning it so that all sides are coated with oil, then cover with a damp cloth or plastic wrap.
Allow the dough to rise in a warm, draft-free place for 1 hour or until it has doubled in size.
Once the dough has risen, punch it down to release the air. Transfer it to a floured surface and divide it into 12 equal pieces.
Shape each piece into a smooth ball by tucking any edges into the bottom.
Place the dough balls into a lightly greased baking tin or tray, leaving a small space between each ball to allow for rising.
Cover the tray with a damp cloth or plastic wrap and allow the dough balls to rise again for about 30 minutes, until doubled in size.
Preheat your oven to 375°F (190°C) during the second rise.
Once risen, bake the pav in the preheated oven for 20-25 minutes, until the tops are golden brown.
Remove from the oven and let them cool slightly before removing from the tray. Enjoy warm or at room temperature.
