  • 500 grams Ground chicken or lamb
  • 1 medium, finely chopped Onion
  • 3 minced Garlic cloves
  • 1 teaspoon Ground cumin
  • 1 teaspoon Ground coriander
  • 1 teaspoon Smoked paprika
  • 0.5 teaspoon Chili flakes
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 tablespoons Olive oil
  • 1 small, thinly sliced Cucumber
  • 2 medium, sliced Tomato
  • 0.25 cup, chopped Fresh parsley
  • 2 tablespoons Lemon juice
  • 0.25 cup Tahini
  • 2 tablespoons Water
  • 4 pieces Pita bread

Directions

Step 1

In a large bowl, combine ground chicken or lamb with chopped onion, minced garlic, ground cumin, ground coriander, smoked paprika, chili flakes, salt, and black pepper. Mix thoroughly using your hands until all the ingredients are well combined.

Shape the mixture into small logs or patties, about 2-3 inches long, and place on a plate. Refrigerate for 15 minutes to help them hold their shape when cooking.
