Ingredients

  • 2 large Chicken breast
  • 1 cup All-purpose flour
  • 0.5 cup Cornstarch
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 Egg
  • 0.5 cup Non-dairy milk
  • 2 cups Vegetable oil
  • 4 medium Russet potatoes, peeled and chopped
  • 0.25 cup Non-dairy butter
  • 2 cloves Garlic, minced
  • 1 cup Chicken broth
  • 1 cup Frozen corn
  • 2 tablespoons All-purpose flour for gravy
  • 1 tablespoon Soy sauce
  • 0.5 teaspoon Salt for potatoes
  • 0.25 teaspoon Black pepper for potatoes

Directions

Step 1

Cut the chicken breasts into bite-sized pieces.

Step 2

In a bowl, combine 1 cup of flour, 0.5 cup of cornstarch, 1 teaspoon of garlic powder, 1 teaspoon of onion powder, 1 teaspoon of paprika, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.

Step 3

In another bowl, whisk together the eggs and 0.5 cup of non-dairy milk.

Step 4

Dip each piece of chicken into the egg mixture, then dredge in the flour mixture, ensuring each piece is well coated.

Step 5

Heat the vegetable oil in a large skillet over medium-high heat. Fry the chicken pieces in batches until golden brown and cooked through, about 6-8 minutes per batch. Remove to a paper towel-lined plate.

Step 6

While the chicken cooks, place the potatoes in a large pot and cover with water. Bring to a boil and cook until tender, about 15-20 minutes.

Step 7

Drain the potatoes and return them to the pot. Add 0.25 cup of non-dairy butter, 0.5 teaspoon of salt, 0.25 teaspoon of black pepper, and minced garlic. Mash until smooth and creamy. Adjust seasoning if necessary.

Step 8

For the gravy, heat 2 tablespoons of non-dairy butter in a saucepan over medium heat. Whisk in 2 tablespoons of flour and cook for 1 minute.

Step 9

Gradually add the chicken broth, whisking constantly to avoid lumps. Add 1 tablespoon of soy sauce and let the gravy simmer until thickened, about 3-5 minutes. Season with salt and pepper to taste.

Step 10

In another saucepan, heat the frozen corn until warm. Set aside.

Step 11

To assemble the bowl, layer mashed potatoes on the bottom, followed by the crispy chicken, then ladle over the gravy, and top with cooked corn.

Step 12

Serve immediately and enjoy your dairy-free homemade famous bowl!
