In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Stir well to ensure the ingredients are evenly distributed.
In a separate bowl or measuring jug, mix the warm water, unsweetened almond milk (1/2 cup), and olive oil. Ensure the liquid mixture is warm, around 110°F (43°C), to activate the yeast properly.
Make a well in the center of the dry ingredients and pour the liquid mixture into it.
Using a spatula or wooden spoon, mix the ingredients together until a dough begins to form. Then, switch to using your hands and knead the dough in the bowl for about 5 minutes until it becomes smooth and elastic.
Cover the bowl with a clean kitchen towel and let the dough rise in a warm, draft-free place for approximately 1 hour, or until it doubles in size.
Once the dough has risen, punch it down to remove excess air. Transfer it to a lightly floured surface and divide it into 12 equal pieces.
Shape each piece into a ball and place them evenly spaced on a greased or lined baking sheet.
Cover the rolls with the kitchen towel and let them rise again for about 20 minutes, or until they have increased in size.
