Ingredients

  • 2.5 cups all-purpose flour
  • 0.5 teaspoon salt
  • 2 tablespoons granulated sugar
  • 0.75 cup coconut oil
  • 6 tablespoons ice water
  • 4 cups apples, peeled, cored, and diced
  • 0.5 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 0.25 teaspoon ground nutmeg
  • 1 teaspoon vanilla extract
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 2 tablespoons non-dairy milk
  • 2 tablespoons turbinado sugar

Directions

Step 1

In a large bowl, combine the all-purpose flour, salt, and granulated sugar.

Step 2

Cut in the coconut oil using a pastry cutter or two forks until the mixture resembles coarse crumbs.

Step 3

Gradually add the ice water, one tablespoon at a time, mixing until the dough comes together. Add more water if necessary.

Step 4

Divide the dough in half, shape into discs, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Step 5

In a medium saucepan, combine the diced apples, brown sugar, cinnamon, nutmeg, and vanilla extract.

Step 6

Cook over medium heat, stirring occasionally, until the apples are soft, about 8-10 minutes.

Step 7

In a small bowl, mix the cornstarch with 2 tablespoons of water, then stir into the apple mixture and cook until thickened.

Step 8

Remove from heat and let cool slightly.

Step 9

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

Step 10

On a lightly floured surface, roll each disc of dough to about 1/8-inch thickness. Cut into 6-inch squares.

Step 11

Place about 2 tablespoons of the apple mixture on one half of each square, leaving a border around the edges.

Step 12

Fold the dough over the filling to form a triangle, pressing the edges with a fork to seal.

Step 13

Transfer turnovers to the prepared baking sheet.

Step 14

Brush the tops with non-dairy milk and sprinkle with turbinado sugar.

Step 15

Cut small slits on the top of each turnover to allow steam to escape.

Step 16

Bake for 20-25 minutes or until golden brown.

Step 17

Remove from oven and let cool on a wire rack before serving.
