Ingredients

  • 8 ounces dairy-free elbow macaroni
  • 2 tablespoons dairy-free butter
  • 2 tablespoons all-purpose flour
  • 2 cups unsweetened almond milk
  • 1 cup nutritional yeast
  • 1 teaspoon dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 tablespoon lemon juice
  • 1 teaspoon sea salt
  • 0.5 teaspoon ground white pepper
  • 0.5 teaspoon paprika
  • 0.25 teaspoon ground turmeric

Directions

Step 1

Bring a large pot of salted water to a boil. Add the dairy-free elbow macaroni and cook according to the package instructions until al dente. Drain and set aside.

Step 2

In a medium saucepan, melt the dairy-free butter over medium heat. Once melted, add the all-purpose flour and whisk continuously for about 2 minutes to form a roux.

Step 3

Gradually whisk in the unsweetened almond milk, ensuring there are no lumps. Continue to whisk until the mixture thickens, roughly 3-5 minutes.

Step 4

Reduce the heat to low and stir in the nutritional yeast, dijon mustard, garlic powder, onion powder, lemon juice, sea salt, ground white pepper, paprika, and ground turmeric. Stir until the sauce becomes smooth and creamy.

Step 5

Taste and adjust seasoning if needed. More nutritional yeast can be added for a cheesier flavor.

Step 6

Combine the cooked macaroni with the cheese sauce, stirring to coat all the pasta evenly.

Step 7

Serve immediately while warm, garnished with a sprinkle of paprika if desired.
