Directions

Step 1

In a medium-sized mixing bowl, combine the shredded unsweetened coconut, coconut milk, coconut oil, maple syrup, and vanilla extract. Mix well until all ingredients are thoroughly combined and the mixture is sticky.

Step 2

Using your hands, shape a tablespoon of the coconut mixture into a small bar or rectangular shape. Place it on a parchment-lined baking sheet. Repeat until all the mixture is used, making approximately 18 bars.

Step 3

Gently press a whole almond onto the top of each coconut bar. Place the baking sheet in the freezer for at least 30 minutes to allow the bars to firm up.
