Ingredients

  • 4 cups Cooked jasmine rice
  • 2 tablespoons Vegetable oil
  • 1 cup Carrots, diced
  • 1 cup Frozen peas
  • 1 medium White onion, finely chopped
  • 3 cloves Garlic, minced
  • 3 tablespoons Soy sauce
  • 2 Eggs
  • 3 Green onions, sliced
  • 1 teaspoon Sesame oil
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Begin by preparing your ingredients: dice the carrots, chop the white onion, mince the garlic, and slice the green onions.

Step 2

In a large wok or skillet, heat the vegetable oil over medium-high heat. Add the diced carrots, white onion, and garlic. Sauté for about 3-4 minutes until the carrots are tender and the onions are translucent.

Step 3

Push the vegetables to one side of the wok. Crack the eggs into the wok and scramble them, stirring constantly, until they are fully cooked.

Step 4

Add the cooked jasmine rice to the wok, breaking up any clumps with your spatula. Stir in the frozen peas and soy sauce. Continue to stir-fry for another 3-4 minutes until the rice is heated through and the peas are tender.

Step 5

Drizzle the sesame oil over the rice and season with salt and black pepper. Stir well to combine all the flavors.

Step 6

Remove from heat and stir in the sliced green onions for added freshness.

Step 7

Serve immediately, while hot, and enjoy your Dairy-Free Hibachi Fried Rice!
