  • 2 tablespoons olive oil
  • 1 small, finely chopped onion

  • 3 cups vegetable broth

  • 0.25 cup, finely chopped fresh cilantro
  • 1 tablespoon, chopped fresh thyme
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 0.5 teaspoon lemon zest

Directions

Step 1

Rinse the rice under cold running water until the water runs clear to remove excess starch. Drain well.

Step 2

In a medium saucepan over medium heat, heat the olive oil. Add the chopped onion and sauté for about 3 minutes, until translucent.

Add the minced garlic to the saucepan and continue to cook for another 1 minute until fragrant.
