Ingredients

  • 800 ml Coconut milk
  • 1 teaspoon Agar-agar powder
  • 2 Probiotic capsules
  • 1 tablespoon Lemon juice
  • 1 tablespoon Fresh dill
  • 1 tablespoon Fresh parsley
  • 1 tablespoon Fresh mint
  • 0.5 teaspoon Salt

Directions

Step 1

In a medium saucepan over medium heat, add 800 ml of coconut milk and bring it to a gentle simmer.

Step 2

Sprinkle 1 teaspoon of agar-agar powder over the coconut milk and whisk continuously until the powder is completely dissolved.

Step 3

Remove the saucepan from heat and allow the mixture to cool to about 37°C (98.6°F), close to body temperature.

Step 4

Open 2 probiotic capsules and stir the probiotic powder into the cooled coconut milk mixture until fully combined.

Step 5

Transfer the mixture into a clean glass or ceramic bowl.

Step 6

Cover the bowl with a clean cloth or a lid that allows air circulation, and let it sit in a warm place for 12-24 hours to ferment. A switched-off oven or a warm spot on your countertop works best.

Step 7

After the fermentation period, the yogurt should have thickened. Stir in 1 tablespoon of lemon juice to enhance the tanginess of the yogurt.

Step 8

Chop 1 tablespoon each of fresh dill, parsley, and mint finely. Stir the chopped herbs into the yogurt and add 0.5 teaspoon of salt to taste.

Refrigerate the herb-infused yogurt for at least 2 hours before serving to allow the flavors to meld together.
