Ingredients

  • 4 pieces large eggs
  • 2 tablespoons unsweetened almond milk
  • 2 tablespoons fresh chives, chopped
  • 1 tablespoon fresh parsley, chopped
  • 1 tablespoon fresh basil leaves, chopped
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper

Directions

Step 1

In a medium bowl, crack the eggs and add almond milk, salt, and pepper. Whisk together until the mixture is evenly combined and slightly frothy.

Step 2

Stir in the chopped chives, parsley, and basil, making sure the herbs are well distributed throughout the egg mixture.

Step 3

Heat a non-stick skillet over medium-low heat and add the olive oil, coating the pan evenly.

Step 4

Pour the egg mixture into the skillet and allow it to sit undisturbed for about 30 seconds to allow the bottom to set slightly.

Step 5

Using a spatula, gently stir the eggs, scraping the pan's edges and folding the eggs into the center. Continue this process until the eggs are cooked to your desired consistency, approximately 3-4 minutes.

Step 6

Once the eggs are set but still a bit creamy, remove from heat. The residual heat will finish cooking the eggs without drying them out.

Step 7

Serve immediately, garnished with extra fresh herbs if desired.
