Ingredients

  • 1.5 kg Lamb shoulder, bone-in
  • 3 tablespoons Olive oil
  • 4 Garlic cloves, minced
  • 2 tablespoons Fresh rosemary, finely chopped
  • 1 tablespoon Fresh thyme, finely chopped
  • 2 tablespoons Fresh parsley, finely chopped
  • 2 tablespoons Dijon mustard
  • 1 teaspoon Lemon zest
  • 1 teaspoon Salt
  • 1 teaspoon Freshly ground black pepper
  • 500 ml Vegetable stock (dairy-free)

Directions

Step 1

Preheat your oven to 160°C (320°F).

Step 2

Place the lamb shoulder on a clean surface and pat dry with paper towels.

Step 3

In a small bowl, combine olive oil, minced garlic, rosemary, thyme, parsley, Dijon mustard, lemon zest, salt, and pepper to form a paste.
