Ingredients

  • 2 lbs venison stew meat, cut into 1-inch cubes
  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 3 large carrots, peeled and sliced
  • 2 celery stalks, sliced
  • 1.5 lbs baby potatoes, halved
  • 2 tbsp tomato paste
  • 1 cup red wine
  • 4 cups beef broth
  • 2 bay leaves
  • 4 fresh thyme sprigs
  • 1 cup frozen peas
  • 1.5 tsp salt
  • 1 tsp black pepper

Directions

Step 1

Heat olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Add the venison cubes in batches, and brown them on all sides. Remove and set aside.

Step 3

In the same pot, add onion and garlic, sautéing until the onion is translucent, about 5 minutes.

Add the carrots and celery, cooking for another 5 minutes until they begin to soften.

Stir in the tomato paste and cook for an additional 2 minutes.

Pour in the red wine, deglazing the pot by scraping up any browned bits from the bottom.
