Ingredients

  • 2 tbsp olive oil
  • 1 large onion, diced
  • 3 medium garlic cloves, minced
  • 1 lb ground beef or turkey
  • 15 oz canned black beans, drained and rinsed
  • 15 oz canned kidney beans, drained and rinsed
  • 15 oz canned corn, drained
  • 14.5 oz canned diced tomatoes with green chilies
  • 4 cups vegetable broth
  • 2 tbsp taco seasoning
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 0.25 cup fresh cilantro, chopped
  • 1 lime, cut into wedges

Directions

Step 1

Heat the olive oil in a large pot over medium heat. Add the diced onion and sauté for about 5 minutes until the onion is translucent.

Step 2

Stir in the minced garlic and cook for another minute until fragrant.

Add the ground beef or turkey to the pot and cook until browned, breaking up the meat with a spoon as it cooks. This should take about 7-10 minutes.
