Ingredients

  • 3 celery stalks, diced
  • 3 medium potatoes, peeled and cubed
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 14.5 ounces canned chopped tomatoes
  • 2 cups cooked chickpeas, drained and rinsed
  • 6 cups fresh spinach, roughly chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons lemon juice
  • 0.25 cup fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and sauté until translucent, about 5 minutes.

Step 3

Stir in the minced garlic and sauté for another 1 minute until fragrant.

Step 4

Add the diced carrots, celery, and cubed potatoes to the pot, and cook for 5 minutes, stirring occasionally.
