Ingredients

  • 2 tablespoons Olive oil
  • 1.5 pounds Beef chuck or stew meat, cubed
  • 2 teaspoons Salt
  • 1 teaspoon Black pepper
  • 1 large Onion, chopped
  • 3 Garlic cloves, minced
  • 3 medium Carrots, sliced
  • 2 stalks Celery stalks, sliced
  • 4 medium Russet potatoes, peeled and cubed
  • 4 cups Beef broth
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried thyme
  • 2 Bay leaves
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium-high heat.

Step 2

Season the cubed beef with salt and pepper. Add the beef cubes to the pot and brown them on all sides, working in batches if necessary to avoid overcrowding. Remove the beef and set aside.

Step 3

In the same pot, add the chopped onion and garlic, sautéing until the onion becomes translucent, about 5 minutes.

Add the sliced carrots and celery to the onion and garlic, cooking until they begin to soften, approximately 3 minutes.

Return the browned beef to the pot, along with the cubed potatoes.

Pour in the beef broth and stir in the tomato paste, making sure it is fully dissolved.

Add the dried thyme and bay leaves. Stir everything together.

About 15 minutes before serving, add the frozen peas and continue to simmer uncovered.

Just before serving, remove the bay leaves and adjust seasoning to taste with additional salt and pepper if necessary.

Serve hot, garnished with freshly chopped parsley.
