  • 28 ounces crushed tomatoes
  • 2 cups beef or vegetable broth
  • 1 piece bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 3 medium potatoes, peeled and diced
  • 1 cup frozen peas
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh parsley, chopped (optional for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the chopped onion and sauté until translucent, about 4-5 minutes.

Stir in the minced garlic, carrots, celery, and red bell pepper. Cook for another 5 minutes until the vegetables start to soften.
