  • 3 cloves garlic, minced
  • 14.5 ounces canned diced tomatoes
  • 4 cups beef broth
  • 1 bay leaf
  • 1 teaspoon thyme, dried
  • 2 medium Russet potatoes, peeled and diced
  • 1 cup green beans, cut into 1-inch pieces
  • 1 cup frozen peas

Directions

Step 1

Heat the olive oil in a large pot over medium-high heat.

Step 2

Add the diced beef chuck to the pot, season with salt and black pepper, and brown evenly on all sides for about 5-7 minutes.

Remove the beef from the pot and set aside.
