Ingredients

  • 2 tablespoons olive oil
  • 1 large, diced onion
  • 3 minced garlic cloves
  • 2 medium, diced carrots
  • 2 medium, diced celery stalks
  • 1 medium, diced zucchini
  • 1 14-ounce can diced tomatoes
  • 6 cups vegetable broth
  • 1 bay leaf
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • 1 15-ounce can, drained and rinsed cannellini beans
  • 1 cup macaroni pasta
  • 2 cups fresh spinach
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup, chopped fresh parsley

Directions

Step 1

Heat olive oil in a large pot over medium heat.

Step 2

Add the diced onion and garlic, and sauté for 3-4 minutes until the onion becomes translucent.

Step 3

Stir in the carrots and celery, continue to sauté for another 5 minutes until the vegetables begin to soften.

Step 4

Add the zucchini, and cook for 3 minutes.

Step 5

Stir in the diced tomatoes (with their juice), vegetable broth, bay leaf, basil, and oregano.

Step 6

Bring to a boil, then reduce the heat and let it simmer for 10 minutes until the vegetables are tender.

Step 7

Add the rinsed cannellini beans and macaroni pasta to the pot. Continue cooking for another 8-10 minutes until the pasta is al dente.

Step 8

In the last few minutes of cooking, stir in the fresh spinach until it wilts.

Step 9

Season the soup with salt and black pepper to taste.

Step 10

Remove the bay leaf, and stir in the chopped fresh parsley before serving.
