  • 3 cloves garlic cloves, minced
  • 2 medium carrots, peeled and sliced into rounds
  • 2 stalks celery stalks, sliced
  • 2 large potatoes, peeled and cubed
  • 2 tablespoons tomato paste
  • 4 cups beef broth (ensure it's dairy-free)
  • 1 bay leaf
  • 1 teaspoon fresh thyme leaves
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium heat.

Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.

Increase the heat to medium-high and add the liver pieces, cooking until browned all over, about 6-8 minutes. Remove the liver and set aside.
