Ingredients

  • 2 pounds lamb shoulder, cubed
  • 3 tablespoons olive oil

  • 3 medium carrots, sliced
  • 2 celery stalks, sliced
  • 4 garlic cloves, minced
  • 3 medium potatoes, peeled and cubed
  • 2 tablespoons tomato paste
  • 1 can (14.5 ounces) canned diced tomatoes
  • 4 cups beef broth
  • 2 bay leaves
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat 2 tablespoons of olive oil in a large pot over medium-high heat. Add the lamb pieces and brown them on all sides, working in batches if necessary. This should take about 5 minutes per batch. Once browned, remove the lamb from the pot and set aside.

Step 2

Add the remaining tablespoon of olive oil to the pot. Add the chopped onion, carrots, and celery. Cook until the vegetables begin to soften, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional minute until fragrant.

Step 4

Add the tomato paste to the pot and stir to combine, cooking for another 2 minutes.

Return the browned lamb to the pot. Add the diced tomatoes, beef broth, bay leaves, thyme, rosemary, salt, and black pepper. Stir well to combine all ingredients.

Bring the stew to a boil, then reduce the heat to low. Cover the pot with a lid and let it simmer for about 90 minutes, stirring occasionally.

After 90 minutes, add the cubed potatoes to the pot. Cover and cook for another 20 minutes or until the potatoes are tender.

Step 8

Add the frozen peas to the stew and cook for another 5 minutes until they are heated through.

Step 9

Remove the bay leaves before serving. Adjust seasoning with more salt and pepper to taste if needed.

Step 10

Garnish with fresh chopped parsley before serving.
