  • 2 diced celery stalks
  • 2 medium, diced potatoes
  • 6 cups vegetable broth
  • 1 14-ounce can canned diced tomatoes
  • 1 15-ounce can cannellini beans, drained and rinsed
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 4 cups, chopped kale
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Step 2

Add the chopped onion and minced garlic; sauté for about 5 minutes until the onion becomes translucent.

Stir in the diced carrots and celery, cooking for another 5 minutes.
