Ingredients

  • 2 tablespoons olive oil
  • 1 pound lean ground beef
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 3 medium carrots, diced
  • 3 celery stalks, diced
  • 1 medium red bell pepper, diced
  • 2 medium potatoes, peeled and diced
  • 4 cups beef broth
  • 14.5 ounces canned diced tomatoes
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 cup frozen peas
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

In a large pot, heat the olive oil over medium heat.

Step 2

Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes.

Step 3

Add the diced onion and minced garlic to the pot, and sauté until the onion is translucent, about 3 minutes.

Step 4

Add the diced carrots, celery, red bell pepper, and potatoes. Stir to combine and cook for another 5 minutes.

Step 5

Pour in the beef broth, canned diced tomatoes (with juices), and tomato paste, stirring until the tomato paste is fully incorporated.

Step 6

Season with Worcestershire sauce, dried thyme, dried oregano, salt, and black pepper, then stir well.

Step 7

Bring the soup to a gentle boil, then reduce the heat to low. Cover and let it simmer for 25-30 minutes or until the vegetables are tender.

Step 8

Add the frozen peas and cook for an additional 5 minutes.

Step 9

Remove from heat and stir in the fresh parsley.

Step 10

Taste and adjust the seasoning if needed. Serve hot.
