Ingredients

  • 4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 cup pineapple juice
  • 0.5 cup warm water
  • 0.33 cup sugar
  • 0.25 cup coconut oil
  • 1 teaspoon salt
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 tablespoon cornstarch

Directions

Step 1

In a small bowl, dissolve the active dry yeast in warm water and set aside for about 5 minutes until it becomes frothy.

Step 2

In a large mixing bowl, combine the pineapple juice, sugar, melted coconut oil, and salt. Add the egg and vanilla extract, and mix well.

Step 3

Stir in the frothy yeast mixture.

Step 4

Gradually add the flour, one cup at a time, mixing until a soft dough forms.

Step 5

Transfer the dough to a floured surface and knead for about 8-10 minutes, until the dough is smooth and elastic. Alternatively, use a stand mixer with a dough hook.

Step 6

Place the dough in a lightly oiled bowl, cover it with a damp cloth, and let it rise in a warm place for about 1 to 2 hours or until it doubles in size.

Step 7

Punch down the dough and divide it into 12 equal pieces. Shape each piece into a ball and place them on a lightly greased baking dish.

Step 8

Cover the rolls with a clean towel and let them rise again in a warm place for about 30 minutes, or until they are puffy.

Step 9

Preheat your oven to 350°F (180°C).

Step 10

In a small bowl, mix the cornstarch with a tablespoon of water until smooth. Brush the tops of the rolls with this mixture.

Step 11

Bake the rolls in the preheated oven for 20-25 minutes, or until they are golden brown and sound hollow when tapped on the bottom.

Step 12

Remove the rolls from the oven and allow them to cool slightly before serving. Enjoy your dairy-free Hawaiian sweet rolls fresh or store them in an airtight container for up to 3 days.
