Ingredients

  • 2 pounds beef chuck roast
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1 medium onion, chopped
  • 1 cup pineapple juice
  • 0.5 cup coconut aminos
  • 3 tablespoons apple cider vinegar
  • 0.25 cup light brown sugar
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons cornstarch
  • 2 tablespoons water
  • 4 green onions, sliced

Directions

Step 1

Trim any excess fat from the beef chuck roast and season it with salt, black pepper, garlic powder, and paprika on all sides.

Step 2

In a large skillet over medium-high heat, sear the beef on all sides until browned. This should take about 8-10 minutes. Transfer the beef to a slow cooker.

Step 3

In the same skillet, add the chopped onion and cook for about 3-4 minutes until soft. Then, add the pineapple juice, coconut aminos, apple cider vinegar, light brown sugar, and minced ginger. Stir to combine and bring the mixture to a simmer.

Step 4

Pour the sauce over the beef in the slow cooker. Cover and cook on low heat for 6-8 hours until the beef is tender and shreds easily.

Step 5

Once cooked, remove the beef from the slow cooker and shred it with two forks.

Step 6

For a thicker sauce, mix the cornstarch with water in a small bowl to create a slurry. Stir this slurry into the sauce in the slow cooker and turn the heat to high, cooking for an additional 10-15 minutes until the sauce thickens.

Step 7

Return the shredded beef to the slow cooker and mix well with the sauce.

Step 8

Serve the dairy-free Hawaiian barbecue beef over rice or in lettuce wraps, garnishing with sliced green onions.
