Ingredients

  • 4 large eggs
  • 2 tablespoons dairy-free milk (such as almond or oat milk)
  • 100 grams cooked ham
  • 1 tablespoon olive oil
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 stalks green onions, chopped
  • 2 tablespoons fresh parsley, chopped

Directions

Step 1

Crack the eggs into a mixing bowl, add the dairy-free milk, salt, and black pepper. Whisk together until the mixture is well combined and slightly frothy.

Step 2

Slice the cooked ham into thin strips or small cubes, if not already done.

Step 3

Heat the olive oil in a non-stick frying pan over medium heat.

Step 4

Add the chopped green onions and cook for 1-2 minutes until they start to soften.

Step 5

Pour in the egg mixture and tilt the pan to spread it evenly across the surface.

Step 6

Allow the eggs to cook for about 2-3 minutes, or until the edges start to set.

Step 7

Evenly distribute the ham and half of the chopped parsley over one half of the omelette.

Step 8

Using a spatula, gently lift the opposite edge of the omelette and fold it over the filling.

Step 9

Cook for another 2-3 minutes, or until the eggs are fully set and the omelette is golden brown on the outside.

Step 10

Slide the omelette onto a plate, sprinkle with the remaining parsley, and serve immediately.
