In a large bowl, combine the flour, active dry yeast, sugar, and salt.
In a small saucepan, heat the water and almond milk until lukewarm, around 37°C (98°F).
Pour the warm liquid mixture over the dry ingredients and mix with a wooden spoon until a dough forms.
Knead the dough on a lightly floured surface for about 8-10 minutes until smooth and elastic.
Place the dough in a lightly oiled bowl, cover with a damp cloth and let it rise in a warm place for about 1 hour until it doubles in size.
Meanwhile, prepare the dairy-free margarine by placing it between two sheets of parchment paper. Roll it into a 10x25 cm (4x10 inches) rectangle and chill it in the fridge.
Once the dough has risen, punch it down and roll it into a 28x28 cm (11x11 inches) square.
Place the chilled margarine block on one half of the rolled dough, fold the other half over, and seal the edges firmly.
Roll the dough into a 20x60 cm (8x24 inches) rectangle. Fold it into thirds like a business letter. Wrap in plastic and refrigerate for 30 minutes.
Repeat the rolling and folding process two more times, chilling for 30 minutes after each turn.
After the final chill, roll the dough into a large rectangle approximately 25x50 cm (10x20 inches).
Cut the rectangle into 8 triangles.
Place a few slices of ham at the wide end of each triangle and roll them up towards the pointy end to form croissants.
Arrange the croissants on a baking sheet lined with parchment paper, cover, and let them rise for another 30 minutes.
Preheat your oven to 200°C (390°F).
Bake the croissants in the preheated oven for 15-20 minutes, until golden and crispy on the outside.
