Preheat your oven to 375°F (190°C). Prepare a baking sheet with parchment paper.
In a large mixing bowl, combine the all-purpose flour and salt.
Add the solid coconut oil to the flour mixture and use a pastry cutter or fork to cut it into the flour until the mixture resembles coarse crumbs.
Gradually add the ice water, one tablespoon at a time, mixing gently until the dough begins to hold together. Do not overmix.
Divide the dough into two equal halves. Flatten each into a disk, wrap in plastic wrap, and refrigerate for 15 minutes.
In a small saucepan over low heat, combine the guava paste, lemon juice, maple syrup, and cornstarch. Stir continuously until the mixture is smooth and thickened. Set aside to cool slightly.
Remove one dough disk from the refrigerator. On a lightly floured surface, roll it out to about 1/8-inch thickness.
Cut out small squares, approximately 3x3 inches, from the rolled dough. Place them onto the prepared baking sheet.
Spoon about a tablespoon of the guava mixture onto the center of each square.
Roll out the second dough disk and cut into similar-sized squares. Place these squares over the filling, pressing the edges with a fork to seal.
Make a small slit or poke a few holes on the top of each pastry using a sharp knife or fork to release steam during baking.
Bake in the preheated oven for 18-20 minutes, or until the pastries are golden brown.
Remove from oven and allow to cool on a wire rack before serving.
