  • 0.75 cup coconut oil, solid

  • 1 cup guava paste
  • 1 tablespoon lemon juice
  • 2 tablespoons maple syrup
  • 1 tablespoon cornstarch

Directions

Step 1

Preheat your oven to 375°F (190°C). Prepare a baking sheet with parchment paper.

Step 2

In a large mixing bowl, combine the all-purpose flour and salt.

Step 3

Add the solid coconut oil to the flour mixture and use a pastry cutter or fork to cut it into the flour until the mixture resembles coarse crumbs.

Step 4

Gradually add the ice water, one tablespoon at a time, mixing gently until the dough begins to hold together. Do not overmix.

Divide the dough into two equal halves. Flatten each into a disk, wrap in plastic wrap, and refrigerate for 15 minutes.
