  • 4 pieces Mountain bread wraps
  • 1 large Red bell pepper
  • 2 medium Zucchini
  • 1 large Red onion
  • 1 medium Eggplant
  • 200 grams Cherry tomatoes
  • 2 tablespoons Olive oil
  • 1 tablespoon Balsamic vinegar
  • 2 small Garlic cloves
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 10 leaves Fresh basil leaves

Directions

Step 1

Preheat your grill or grill pan to medium-high heat.

Slice the red bell pepper, zucchini, red onion, and eggplant into long strips. Halve the cherry tomatoes.
