Ingredients

  • 8 ounces dairy-free halloumi
  • 4 cups mixed salad greens
  • 1 cup cherry tomatoes
  • 1 medium cucumber
  • 3 tablespoons extra virgin olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons fresh parsley
  • 2 tablespoons fresh mint
  • 0.5 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.5 small red onion

Directions

Step 1

Begin by slicing the dairy-free halloumi into 1/2 inch thick slices.

Step 2

Heat a grill pan over medium-high heat and lightly brush it with some of the olive oil.

Step 3

Place the halloumi slices onto the grill pan and cook for about 2-3 minutes per side, or until grill marks appear and the cheese is heated through. Remove from heat and set aside.

Step 4

Halve the cherry tomatoes and thinly slice the cucumber.

Step 5

Finely chop the fresh parsley and mint, and thinly slice the red onion.

Step 6

In a small bowl, whisk together the remaining olive oil, lemon juice, parsley, mint, salt, and pepper to make the dressing.

Step 7

In a large salad bowl, combine the mixed salad greens, cherry tomatoes, cucumber, and red onion. Toss gently to mix.

Step 8

Add the grilled halloumi slices on top of the salad.

Step 9

Drizzle the lemon-herb dressing over the salad and toss lightly to combine.

Step 10

Serve the salad immediately, ensuring each serving gets a good amount of grilled halloumi and vegetables.
