Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 2 tablespoons lime juice
  • 1 teaspoon garlic powder
  • 1 teaspoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 cups ripe mangoes, peeled and diced
  • 1 cup red bell pepper, diced
  • 0.25 cup red onion, finely chopped
  • 0.5 cup fresh cilantro, chopped
  • 1 piece jalapeño, seeded and minced
  • 3 tablespoons lime juice
  • 0.5 teaspoon salt

Directions

Step 1

Start by marinating the chicken. In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lime juice, garlic powder, ground cumin, smoked paprika, 1 teaspoon of salt, and 0.5 teaspoon of black pepper.

Step 2

Place the chicken breasts in a resealable plastic bag or shallow dish and pour the marinade over them. Ensure the chicken is evenly coated. Seal the bag or cover the dish, and allow it to marinate in the refrigerator for at least 30 minutes, or up to 4 hours for more flavor.

Step 3

While the chicken is marinating, prepare the mango salsa. In a medium bowl, combine the diced mangoes, red bell pepper, red onion, fresh cilantro, minced jalapeño, 3 tablespoons of lime juice, and 0.5 teaspoon of salt. Stir well to mix all the ingredients evenly. Taste and adjust seasoning if necessary. Set aside.

Step 4

Preheat your grill to medium-high heat. Once heated, lightly oil the grill grates to prevent sticking.

Step 5

Remove the chicken from the marinade and discard any remaining marinade. Place the chicken breasts on the hot grill.

Step 6

Grill the chicken for about 6-8 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through with nice grill marks.

Step 7

Once cooked, remove the chicken from the grill and let it rest for a few minutes to retain its juices.

Step 8

Serve the grilled chicken breasts with a generous topping of mango salsa on each, either on individual plates or a large serving platter. Garnish with extra cilantro if desired.

Step 9

Enjoy this flavorful Dairy-Free Grilled Chicken with Mango Salsa either as a standalone dish or with a side of your choice, like coconut rice or a green salad.
