Ingredients

  • 2 pieces boneless, skinless chicken breasts
  • 4 tablespoons olive oil

  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 6 cups mixed salad greens
  • 1.5 cups cherry tomatoes
  • 1 medium cucumber
  • 0.5 medium red onion
  • 1 large avocado
  • 2 tablespoons balsamic vinegar
  • 1 teaspoon honey

Directions

Step 1

In a small bowl, whisk together 2 tablespoons of olive oil, 2 tablespoons of lemon juice, minced garlic, oregano, salt, and black pepper.

Place the chicken breasts in a shallow dish and pour the marinade over them. Let them marinate for at least 15 minutes, or up to an hour in the refrigerator if you have the time.
