Ingredients

  • 2 pieces Boneless, skinless chicken breasts
  • 2 tablespoons Olive oil
  • 2 tablespoons Lemon juice
  • 1 teaspoon Garlic powder
  • 1 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 2 pieces Burger buns
  • 2 large leaves Lettuce leaves
  • 1 sliced Tomato
  • 0.5 sliced Red onion
  • 1 sliced Avocado
  • 2 tablespoons Mustard

Directions

Step 1

Place the chicken breasts between two pieces of plastic wrap or parchment paper and pound them to an even thickness using a meat mallet or rolling pin.

Step 2

In a small bowl, whisk together olive oil, lemon juice, garlic powder, paprika, salt, and pepper to create a marinade.

Step 3

Place the chicken breasts in a shallow dish or a resealable plastic bag and pour the marinade over them, ensuring they are well coated. Allow the chicken to marinate for at least 15 minutes at room temperature or up to 2 hours in the refrigerator.

Step 4

Preheat your grill to medium-high heat. Lightly oil the grill grates to prevent sticking.

Step 5

Remove the chicken from the marinade and place it on the grill. Cook for 6–7 minutes on each side, or until the internal temperature reaches 165°F (74°C) and the chicken is no longer pink inside.

Step 6

While the chicken is grilling, slice the burger buns in half and place them on the grill, cut side down, for 1–2 minutes until lightly toasted.

Step 7

Assemble the burgers by spreading mustard on the bottom halves of the toasted buns. Layer each with a lettuce leaf, a grilled chicken breast, slices of tomato, red onion, and avocado.

Step 8

Top with the other half of the bun and serve immediately. Enjoy your dairy-free grilled chicken burgers!
