  • 2 Large globe artichokes
  • 4 tablespoons Olive oil
  • 3 Garlic cloves, minced

  • 2 tablespoons Fresh parsley, chopped
  • 4 cups Water

Directions

Step 1

Fill a large pot with 4 cups of water and bring to a boil.

While waiting for the water to boil, prepare the artichokes: Cut off the top inch of each artichoke and trim the tips of the leaves with kitchen scissors. Cut off the stem so the artichoke can sit flat. Slice each artichoke in half lengthwise, exposing the choke.

Use a spoon to scoop out the fuzzy choke and any sharp purple-tipped leaves inside.
