Ingredients

  • 1 large Cucumber
  • 3 medium Tomatoes
  • 1 medium Green Bell Pepper
  • 1 small Red Onion
  • 0.5 cup Kalamata Olives
  • 2 tablespoons Caper Berries
  • 0.25 cup Extra Virgin Olive Oil
  • 2 tablespoons Red Wine Vinegar
  • 1 teaspoon Dried Oregano
  • 1 small Lemon
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black Pepper

Directions

Step 1

Wash and dry all the vegetables thoroughly before beginning.

Step 2

Peel and slice the cucumber in half lengthwise. Using a spoon, scoop out the seeds, then slice the cucumber halves into half-moons.

Step 3

Core the tomatoes and cut them into wedges. If preferred, you can remove the seeds.

Step 4

Remove the seeds and core from the green bell pepper, then slice it into thin strips.

Step 5

Peel the red onion and slice it into thin rings or half-rings, as preferred.

Step 6

In a large mixing bowl, combine the sliced cucumber, tomatoes, bell pepper, and red onion.

Step 7

Add the Kalamata olives and caper berries to the bowl with the vegetables.

Step 8

In a small bowl, whisk together the extra virgin olive oil, red wine vinegar, and dried oregano. Squeeze the juice of one lemon into the mixture and continue to whisk until emulsified.

Step 9

Season the vinaigrette with salt and black pepper, adjusting to taste.

Step 10

Pour the vinaigrette over the vegetable mixture, tossing gently to ensure everything is well-coated.

Step 11

Let the salad sit for 10 minutes at room temperature to allow the flavors to meld before serving.

Step 12

Transfer the salad to a serving bowl or platter and enjoy your dairy-free Greek salad!
