Ingredients

  • 1.5 cups Jasmine rice
  • 3 cups Water
  • 2 cups Fresh spinach leaves
  • 1 cup Cilantro leaves
  • 1 cup Fresh parsley leaves
  • 1 medium Green bell pepper
  • 3 large Garlic cloves
  • 0.5 large Onion
  • 3 tablespoons Olive oil
  • 1 small Lime
  • 1 teaspoon Cumin powder
  • 1.5 teaspoons Salt
  • 0.5 teaspoon Black pepper
  • 1 small Jalapeño (optional for spice)

Directions

Step 1

Rinse the jasmine rice under cold water until the water runs clear. Set aside to drain.

Step 2

In a blender, combine the spinach leaves, cilantro, parsley, green bell pepper, garlic cloves, and optional jalapeño if you desire extra spice. Add half of the water and blend until smooth.

Step 3

Finely dice the onion.

Step 4

In a large saucepan, heat the olive oil over medium heat.

Add the diced onion to the pan and sauté until translucent, about 5 minutes.

Stir in the rice, cumin powder, salt, and black pepper. Cook, stirring frequently, for about 2 minutes until the rice appears slightly toasted.
