Ingredients

  • 1 pound Fresh green beans
  • 0.5 cup Sliced almonds
  • 3 tablespoons Olive oil
  • 2 cloves Garlic, minced
  • 1 whole Lemon, juiced and zested
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 2 tablespoons Fresh parsley, chopped
  • 4 cups Water
  • 1 tray Ice cubes

Directions

Step 1

Bring a large pot of water with a pinch of salt to a boil. Prepare a large bowl with ice water nearby.

Step 2

Trim the ends of the green beans.

Step 3

Once the water is boiling, add the green beans and cook for 3-5 minutes, or until they are tender but still crisp.

Step 4

Quickly transfer the green beans to the bowl of ice water to stop the cooking process and retain their bright green color. Drain well and set aside.

Step 5

In a large skillet over medium heat, add 1 tablespoon of olive oil. Add the sliced almonds and toast, stirring often, for about 2-3 minutes, or until they are golden brown. Be careful not to burn them. Remove the almonds from the skillet and set aside.
