Ingredients

  • 4 pieces Whole wheat tortillas
  • 1 cup Hummus
  • 1 medium Cucumber
  • 1 cup Cherry tomatoes
  • 0.5 medium Red onion
  • 0.5 cup Kalamata olives
  • 2 cups Fresh spinach leaves
  • 2 tablespoons Fresh lemon juice
  • 2 tablespoons Olive oil
  • 1 teaspoon Dried oregano
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Peel and slice the cucumber into thin rounds. Halve the cherry tomatoes. Thinly slice the red onion. Halve and pit the Kalamata olives.

Step 2

In a small bowl, whisk together the fresh lemon juice, olive oil, dried oregano, salt, and black pepper to make the dressing.
