Ingredients

  • 1 large cucumber
  • 250 grams cherry tomatoes
  • 0.5 medium red onion
  • 1 medium green bell pepper
  • 100 grams black olives
  • 150 grams dairy-free feta cheese
  • 60 ml extra virgin olive oil
  • 30 ml red wine vinegar
  • 1 teaspoon dried oregano
  • 0.5 teaspoon sea salt
  • 0.25 teaspoon freshly ground black pepper

Directions

Step 1

Wash the cucumber thoroughly, then cut it lengthwise and slice into semi-circles roughly 0.5 cm thick. Add the cucumber slices to a large salad bowl.

Step 2

Rinse the cherry tomatoes under cool water. Halve each tomato and add them to the salad bowl with the cucumber.

Step 3

Peel the red onion and slice it into thin half-moons. Separate the slices and place them in the salad bowl.

Step 4

Deseed the green bell pepper and cut it into thin strips. Add these to the salad bowl along with the other vegetables.

Step 5

Drain the black olives and add to the salad bowl.
