Ingredients

  • 4 large caps Portobello mushrooms
  • 4 tablespoons Olive oil
  • 2 tablespoons Balsamic vinegar
  • 2 tablespoons Soy sauce
  • 2 minced Garlic cloves
  • 1 teaspoon Thyme leaves
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 buns Dairy-free whole-wheat burger buns
  • 1 sliced Tomato
  • 0.5 sliced Red onion
  • 1 sliced Avocado
  • 4 pieces Lettuce leaves
  • 4 teaspoons Dijon mustard

Directions

Step 1

Clean the Portobello mushroom caps and remove the stems. Use a spoon to gently scrape out the gills from the underside of the mushrooms.

Step 2

In a small bowl, whisk together olive oil, balsamic vinegar, soy sauce, minced garlic, thyme leaves, salt, and black pepper.

Place the mushroom caps in a shallow dish and pour the marinade over them, making sure they are well-coated. Let them marinate for at least 15 minutes.
