Ingredients

  • 1 pound beef stew meat
  • 1 medium bottle gourd (lauki), peeled and diced
  • 2 tablespoons coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 1 cup canned coconut milk
  • 1 cup water
  • 2 tablespoons curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 0.5 teaspoon turmeric powder
  • 0.5 teaspoon red chili powder
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0.25 cup fresh cilantro, chopped
  • 2 tablespoons lemon juice

Directions

Step 1

Heat the coconut oil in a large pot over medium-high heat.

Step 2

Add the chopped onion and sauté until it turns translucent, about 5 minutes.

Step 3

Stir in the minced garlic and ginger, cooking until fragrant, about 1 minute.

Step 4

Add the beef stew meat to the pot and brown on all sides, about 5-7 minutes.

Step 5

Mix in the diced bottle gourd, coconut milk, and water.

Step 6

Stir in the curry powder, ground cumin, coriander, turmeric, red chili powder, salt, and black pepper until well combined.

Step 7

Bring the mixture to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 40-45 minutes or until the beef is tender and the gourd is soft.

Step 8

Stir occasionally and add more water if necessary to prevent sticking.

Step 9

Once cooked, adjust seasoning with additional salt or chili powder, if desired.

Step 10

Stir in the lemon juice and garnish with fresh cilantro before serving.

Step 11

Serve hot with rice or flatbread.
