Ingredients

  • 4 medium Yukon Gold potatoes
  • 0.5 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 large egg or flax egg
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 0.5 teaspoon smoked paprika
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons chopped fresh parsley
  • 0.25 cup olive oil

Directions

Step 1

Peel and coarsely grate the Yukon Gold potatoes. Place the grated potatoes into a clean kitchen towel and squeeze out as much excess moisture as possible.

Step 2

In a large mixing bowl, combine the grated potatoes, all-purpose flour, baking powder, and egg (or flax egg if vegan).

Step 3

Stir in garlic powder, onion powder, smoked paprika, salt, black pepper, and chopped fresh parsley until well combined.

Step 4

Heat olive oil in a large non-stick skillet over medium-high heat.

Step 5

Scoop about 2 tablespoons of the potato mixture and shape into a patty. Carefully place it into the hot oil. Repeat to fill the skillet without overcrowding.

Step 6

Cook the fritters for about 3-4 minutes on each side, or until they are golden brown and crispy.

Step 7

Transfer the cooked fritters to a plate lined with paper towels to drain excess oil.

Step 8

Continue cooking in batches until all the potato mixture is used.

Step 9

Serve the fritters warm garnished with additional parsley if desired.
