Ingredients

  • 4 medium Potatoes
  • 2 cups All-purpose flour
  • 1 large Egg
  • 1.5 teaspoons Salt
  • 2 tablespoons Olive oil
  • 1 pound Ground beef
  • 1 large, chopped Onion
  • 3 minced Garlic cloves
  • 28 ounces Canned crushed tomatoes
  • 2 tablespoons Tomato paste
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dried basil
  • 0.5 teaspoon Black pepper
  • 0.25 cup, chopped Fresh parsley

Directions

Step 1

Boil potatoes in a pot of salted water until tender, about 20 minutes. Drain and let cool slightly, then peel and mash until smooth.

Step 2

On a clean surface, combine mashed potatoes with flour, egg, and 1 teaspoon of salt. Knead gently to form a smooth dough, adding more flour if needed.

Step 3

Divide dough into four pieces. Roll each piece into a rope about 1/2 inch thick. Cut into 1-inch pieces and press each piece gently with a fork to create grooves.

Step 4

Bring a large pot of salted water to a boil. Cook gnocchi in batches until they float, about 2 minutes. Use a slotted spoon to transfer them to a dry surface.

Step 5

In a large pan, heat olive oil over medium heat. Add chopped onion and cook until soft, about 5 minutes. Stir in minced garlic and cook for 1 minute more.

Step 6

Add ground beef to the pan, breaking it up with a spoon. Cook until browned, about 7 minutes. Drain excess fat if necessary.

Step 7

Stir in crushed tomatoes, tomato paste, oregano, basil, 0.5 teaspoon of salt, and black pepper. Let the sauce simmer on low heat for 30 minutes, stirring occasionally.

Step 8

Add cooked gnocchi to the sauce, gently stirring to coat. Cook for another 5 minutes to heat through.

Step 9

Serve hot, garnished with fresh chopped parsley.
