Ingredients

  • 2 cups Gluten-free all-purpose flour blend
  • 1 tablespoon Baking powder
  • 0.5 teaspoon Salt
  • 3 tablespoons Coconut sugar
  • 0.5 cup Cold coconut oil or vegan butter
  • 0.75 cup Unsweetened almond milk
  • 1 tablespoon Lemon juice
  • 1 teaspoon Vanilla extract
  • 0.5 cup Optional: dried fruit (raisins, cranberries, etc.)

Directions

Step 1

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Step 2

In a large mixing bowl, whisk together the gluten-free flour, baking powder, salt, and coconut sugar until well combined.

Step 3

Cut the cold coconut oil or vegan butter into small pieces and add them to the flour mixture. Use a pastry cutter or your fingers to rub the fat into the flour until the mixture resembles coarse crumbs.

Step 4

In a small bowl, combine the almond milk, lemon juice, and vanilla extract. Let it sit for a minute to curdle slightly, creating a dairy-free buttermilk.

Make a well in the center of the dry ingredients and pour in the almond milk mixture. Stir gently with a spatula until the dough just comes together. If including dried fruit, fold it in at this stage.
